You normally think of easy and quick food items when you plan a camping trip. Desserts are often out of question when you are camping somewhere in the wild without proper access to complex cooking ingredients and tools. But, you don’t need to compromise on your sugar cravings when out in the wild. Here are some amazingly delicious and easy camping desserts you can prepare and enjoy yourself amidst nature.
Basil Berry Lemonade Sorbet
1 c. sugar
1 c. lightly packed fresh basil
6 c. frozen mixed berries
3/4 c. lemon juice
Combine sugar and a cup of water in a saucepan. Heat until the sugar dissolves. Add basil in the water and let stand for 15 minutes. Strain the syrup, discarding the basil.
Refrigerate this liquid until it is cold.
Pure frozen berries in a blender. Add lemon juice and cooled basil sugar syrup. Transfer this into a baking pan and freeze until firm.
Scoop and serve.
Vegan Chocolate Pudding
1 ½ cup coconut cream
½ cup unsweetened cocoa powder
6 tbsp maple syrup
2 tbsp pure vanilla extract
1 pinch sea salt
Take a saucepan and whisk coconut cream, unsweetened cocoa and maple syrup and mix well until smooth.
Stop once you get a smooth and silky texture. Continue to cook and stir over low flame until the mixture starts boiling.
Remove from heat, stir the vanilla and the salt. Add some more maple syrup if you like it sweeter. Pour this mixture into individual containers, and refrigerate to chill or set.
Cover and set in the fridge overnight to get a thick and creamy pudding.
Campfire Banana Boats
8 small marshmallows
1 graham cracker square
2 tablespoons milk chocolate
Take a banana and cut it down in the center with its peel on. Do not cut it all the way through, just a little deep in the middle.
Stuff chocolate and mini marshmallows in the center.
Wrap it in a foil and place on a campfire grill until the marshmallows have melted. This should take 10 minutes to get done.
Unwrap it and crush graham crackers on it and enjoy.
Grilled Peaches with Honey Yoghurt
2 large ripe peaches
1 tablespoon brown sugar
1 (5.3oz) container thick vanilla yogurt, such as Greek yogurt or skyr
3-4 mint leaves, minced
Slice the peaches in half and remove the pits. Sprinkle the brown sugar over the cut sides.
Place the peaches cut side down onto the grill over low to medium-low heat and cook until the peaches are warm and beginning to soften, about 8 minutes, flipping halfway.
Remove from grill and top each peach half with vanilla yogurt, a drizzle of honey, and a sprinkle of mint.
